100% Pure Guar Gum Powder (e412) for use in molecular gastronomy. Guar Gum is an all purpose thickener and stabilizer. It hydrates in cold water with high low-shear viscosity but is strongly shear-thinning. Stable at pH range 5-7. It is a better emulsifier than locust bean gum. This gum shows viscosity synergy with xanthan gum.
